Friends, today we are going to make broccoli sabzi (vegetable curry). Let’s start the recipe.

Ingredients:

  • 1 cup green peas, washed
  • 1 head of broccoli, washed and cut into florets
  • 1 large potato, peeled, washed, and chopped
  • 1 green chili
  • 3 tablespoons mustard oil
  • 1 bay leaf
  • 3-4 cloves
  • 4-5 black peppercorns
  • 1 piece of cinnamon stick
  • 1 onion, chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala powder
  • 2 tomatoes, pureed
  • Salt to taste
  • 1 glass of water

Method:

1. Prepare the Broccoli and Vegetables

First, wash the broccoli and cut it into small florets. Peel and wash the potato, then chop it into small pieces. Also, wash the green peas.

2. Heat the Pan

Place a pan on the stove and add 3 tablespoons of mustard oil. Heat the oil thoroughly.

3. Fry the Broccoli

Once the oil is hot, add the chopped broccoli and stir-fry on medium flame for 3-4 minutes until it becomes soft.

4. Prepare the Spices

In the remaining oil in the pan, add the bay leaf, cloves, black peppercorns, and cinnamon stick. Let them crackle.

5. Add Onion and Green Chili

Now, add the chopped onion and sauté until it becomes lightly golden. Then, add the chopped green chili.

6. Add Potato and Ginger-Garlic Paste

Next, add the chopped potato and sauté for 2 minutes. Then, add the ginger-garlic paste and cook for another 2 minutes to remove the raw smell.

7. Add Peas and Spices

Now, add the green peas and sauté for 2 minutes. Then, add 1/2 teaspoon turmeric powder, 1/2 teaspoon red chili powder, and 1/2 teaspoon garam masala powder. Mix well.

8. Add Tomato Puree and Salt

Add the tomato puree and salt to taste. Mix everything well and cook for 2 minutes with the lid on.

9. Add Water and Cook

Once the spices are cooked, add 1 glass of water. Adjust the water quantity based on the desired consistency of the curry. Mix well and cook on medium flame for 6-7 minutes, stirring occasionally.

10. Add Broccoli

Finally, add the fried broccoli to the pan and mix it into the curry. Cook for another 3-4 minutes. You can cover the pan if desired.

11. Serve the Sabzi

The broccoli sabzi is now ready. Turn off the heat and transfer the sabzi to a serving bowl.
